Papas Rellenas (Colombian Stuffed Potatoes) 🥔
Creamy mash wrapped around seasoned beef picado, breaded and fried until the shell crackles — Bogotá's street-table staple, served with ají hot sauce and a squeeze of lime.
Method
-
1
Boil potatoes in salted water until fork-tender, about 20 minutes; drain and mash coarsely.
-
2
Soften onion, tomato, scallions and garlic in olive oil with cumin, salt and pepper, 5 minutes.
-
3
Add ground beef and cook, stirring, 10–15 minutes until dry and deeply coloured; cool.
-
4
Whisk egg, flour, milk and a pinch of salt into a thin batter.
-
5
Flour your hands, flatten a handful of mash, spoon in beef filling and seal into a golf-ball oval.
-
6
Dip each papa rellena in batter, then fry in 180°C oil until the crust is golden and crackling.
-
7
Drain briefly and serve hot with ají and lime wedges.
