Mote con Huesillo 🍑
Chile's summer street classic, served ice-cold from glass jars at festival stalls: dried peeled wheat (mote) simmered in a cinnamon-clove syrup, folded with plump huesillos — sun-dried halved peaches — and drowned in the same ruby syrup over cubes of ice.
Método
-
1
Simmer the soaked mote in fresh water with the cinnamon and cloves until tender and bloated, 60-80 minutes; drain, discard spices, keep the pot warm.
-
2
Separately, simmer huesillos in 1.2 L water with sugar and orange peel for 20 minutes until the fruit is plump and the liquid is a light syrup; let it cool in the pot.
-
3
Serve very cold: a spoonful of mote in a glass, spoonfuls of huesillos and their syrup over it, a cascade of ice.
-
4
Traditional stalls drink the syrup first from the jar and fish the fruit with a long spoon — do it however your glass allows.
