Carciofi alla Giudia (Roman Jewish Deep-Fried Artichokes) 🌸
Three hundred years of Roman Jewish kitchens reduced to one gesture: flatten a baby artichoke, salt it upside-down so the leaves open like a calyx, and fry it leaf-side first until the choke dries to a crisp and every petal curls into a golden, edible chrysanthemum. No breading, no cheese, no bargain — just olive oil at its smoking patience and the mammola tenderness that comes from frying long enough to cook the core. Served upside-down on paper in the Via Catalunga, crunch-first, lemon-last. It is the only vegetable dish in Italy with a synagogue attached to its history, and the reason artichoke season in Rome is treated like a holiday.

1
Snap off the tough outer leaves until you reach the pale ones. Take a sharp knife and chop the top third off; with scissors, snip the pointed tip from every remaining leaf. Pare the stem flat so the artichoke can stand upside-down — but keep a short stub, it's a handle.
-
2
Open the choke: with a small pointed knife or teaspoon, scrape out the fuzzy inner leaves at the heart (big artichokes only; mammola are tender enough). Immediately drop into lemon water.
-
3
Dry the artichokes completely, then hold each upside-down and tap the top on the board, prying the leaf-base pockets apart with your fingers so the flower opens like a cup.
-
4
Generously salt and pepper inside the opened flower, then more on the outside. The salt inside is the entire seasoning.
-
5
Heat oil in a deep pan: first fry at medium (about 160°C) leaf-side down for 8-10 minutes. You are drying the choke and cooking the core, not coloring yet. Flip, fry the stem side 5 minutes more.
-
6
Turn heat to high, and with a fork or spoon splay the leaves wide, flash-frying leaf-first in the hot oil (190°C) 2-3 minutes until every petal is lacquered, curled and crisp like a chip. Baste opened petals with oil.

7
Drain leaf-side down on paper, salt again if needed, serve immediately upside-down with lemon wedges. Eat by pulling off petals like a flower — one crunch per petal.
