Ghormeh Sabzi 🌿
Iran's beloved national stew: fried parsley, fenugreek and cilantro braised with lamb, red beans and dried limes until the oil rises to a dark green crown. Bitter, herbal and deeply savoury — no Persian childhood is complete without it.
Method
-
1
Wash herbs, dry well, and chop very fine. Fry them in oil over medium heat 8–10 minutes until dark green and fragrant — this step is the soul of the dish, do not rush it.
-
2
In a separate pot, brown onions in oil, add meat chunks and sear; stir in turmeric and pepper.
-
3
Add the fried herbs, soaked beans and water. Bring to a boil, skim, then simmer covered 90 minutes.
-
4
Pierce dried limes with a fork, soak 10 min in warm water, then drop into the stew. Simmer another 20–30 minutes until oil floats green on top.
-
5
Season with salt, serve over steamed basmati rice with the lime broth spooned over.
