Shopska Salad (Bulgarian Tomato, Cucumber & Sirene) 🥗
The flag on a plate: red tomatoes, green peppers, white sirene cheese grated into a snowfall over the top. Named after the Shopski region, this is Bulgaria's national starter — no vinegar in the bowl, just sun-ripe vegetables, onion, parsley, a splash of the strained tomato juice as dressing, and that snow you shake off the grater.
Method
-
1
Dice tomatoes, cucumber and pepper into rustic chunks; layer them on a wide plate with the onion rings and parsley.
-
2
Dress simply: salt, the tomato juices you saved from the board, and oil poured in a thin stream.
-
3
Tuck cubes of sirene through the salad so they touch the vegetables.
-
4
The signature move: grate a generous snowfall of sirene over the entire plate from above.
-
5
Serve immediately with bread — the snow melts into the tomato juice, and that mix is the reason for the dish.
