Kaya Toast Set (Coconut-Egg Jam Toast, Soft-Boiled Eggs & Kopi) 🍞
Singapore's breakfast trinity, ordered at any kopitiam as 'kaya toast set': thin-cut bread griddled crisp over charcoal heat, sandwiched with cold butter and kaya — a slow-stirred jam of coconut milk, eggs and pandan that tastes like custard that went to the gym. The set comes with two wobbly soft-boiled eggs you season with white pepper and dark soy, and a small kopi with condensed milk. The method of attack is canon: first bite clean, then drop the toast into the egg dish and fish out the soggy, savory-sweet wreckage. Unpretentious, three-dollar happiness with UNESCO-level hawker pedigree.
Method
-
1
Kaya: blend coconut milk with sugar and pandan, warm gently until sugar melts, strain into a bowl and whisk in the eggs and yolk.
-
2
Cook the mix over a bain-marie (or lowest flame, pot over barely simmering water), stirring almost constantly with a figure-eight motion: 30-45 minutes until thick enough to coat a spoon and turning custard-yellow. Late stir more — it scorch-sulks. Keeps refrigerated a month.
-
3
Soft-boil: bring a small pot of water to a bare simmer, off heat slide in eggs, lid on, 6 minutes for runny-wet Singapore style (7 for slightly set). Cool 1 minute, crack into bowls so the whites spread into clouds.
-
4
Toast: butter one face of each slice — cold butter between hot toast is the rule — and griddle both sides in a dry pan or over charcoal until glassy-crisp with lacquered edges.
-
5
Slice the sandwich into two, diagonal if you're fancy. Season the eggs with white pepper and a few drops of dark soy (not sweet soy!).
-
6
Serve with kopi doctored with condensed milk. Protocol: first bite dry, then dunk toast into egg and pepper, eat with a spoon like the kopitiam regulars do.
