Soup Curry (Sapporo's Brothy Spice-Bowl with Blistered Vegetables) 🍛
Sapporo looked at thick Japanese curry and asked: what if it were a soup instead? Soup curry arrived — a long-simmered pork-and-spice broth, translucent but ferociously aromatic, ladled over rice around an architecture of fried eggplant, pumpkin and lotus root, crowned with a blistered chicken leg. You eat it in layers: broth first, vegetables next, then soak the rice. Spiciness is a menu column from 1 to 10; tourists learn humility at 5.
Method
-
1
Toast curry powder and whole spices dry until fragrant; add garlic-ginger and cumin paste, then the minced pork, breaking it up and browning hard, 8 minutes.
-
2
Stir in grated onion and carrot; cook down until jammy and dark, another 10 minutes — this is the body of the soup.
-
3
Pour in stock, add seasonings, simmer 30 minutes loosely. Strain for clarity, or keep rustic; true shops skim the fat back in.
-
4
Meanwhile roast or pan-fry the vegetables in spiced oil until edges blister. Blister the chicken leg skin-side down until bronzed, cooking through.
-
5
Reunite broth with a ladle of rice in the bowl. Arrange vegetables and chicken on top like a raft. Eat the broth first, then the vegetables, then collapse the rice into the curry. Chili level: be honest.
