Lahsa (Yemeni Skillet Eggs with Cream) 🍳

Sana'a's weekend brunch in one skillet: onions sweat down, tomatoes collapse into a red base, eggs are stirred in loose and steamed under a lid until just set, then finished with a slick of liquid cheese. Torn flatbread is mandatory, not optional.

Middle East Yemeni ⏱ 30 min Easy

Method

  1. 1

Warm olive oil over medium heat and soften the diced onion until translucent, a few minutes.

  2. 2

Add the tomato and cook 4-5 minutes until it breaks down into a thick red sauce.

  3. 3

Season with allspice, cracked pepper and salt.

  4. 4

Crack in the eggs and stir through loosely for 2 minutes — you want curds, not an omelette.

  5. 5

Cover and steam 5-6 minutes until the top is just set.

  6. 6

Spread the liquid cheese over the surface, re-cover for 1 minute until it melts, and serve straight from the pan with flatbread for tearing.
