Kapsalon 🍟

A Rotterdam barber-shop invention that conquered the Netherlands: shoestring fries baked under doner meat and melted Gouda, then buried in salad, garlic sauce and sambal. Named after a haircut. Eat with a fork, in a tray, unapologetically.

Europe Dutch ⏱ 30 min min Easy

Method

  1. 1

Fry the shoestring fries until crisp and golden, drain well.

  2. 2

Scatter the doner meat over the fries in a deep baking tray; spoon more fat over if the meat is lean.

  3. 3

Blanket with grated Gouda and bake at 200°C until the cheese melts and blisters, about 8-10 minutes.

  4. 4

Top with shredded lettuce and tomato, leaving them cool and raw against the hot tray.

  5. 5

Finish with zigzags of garlic sauce and sambal.

  6. 6

Dig in straight from the tray — the crunch-melt-salad stack does not survive plate transfer.
