Reykjavik Skyr Bowl with Berries 🫐

Skyr has been Iceland's breakfast-cum-dessert since the sagas: a strained cultured cheese that eats like thick yogurt, denser and tangier, once made from the day's last milk and left overnight on the porch to sour. In Reykjavik kitchens the bowl is simple to the point of dogma — cold skyr loosened with a spoon of cream and milk until it just yields to the spoon, sugar if the milk is sour, then whatever the summer gave: blueberries, crowberries or wild strawberries, sometimes a drizzle of oat syrup from the same pot that made the skyr. No gelatin, no flavorings: the thickness is the whole argument.

Method

  1. 1

Whisk skyr with cold milk a few spoons at a time until airy but still thick — it should coat a spoon without sliding.

  2. 2

Sweeten with sugar or oat-malt syrup; if the skyr tastes sour, give it a little more than you think it needs.

  3. 3

Warm berries gently in a pan with the honey until they just begin to bleed juice (or thaw frozen ones and keep their juice).

  4. 4

Spoon skyr into bowls, top with warm berries and their juices so they streak down the white.

  5. 5

Finish with toasted oats or crushed rye crisp and one cold spoon of cream. Eat immediately, at home temperature, not straight from the fridge.
