Doubles (Trinidadian Curried Chickpeas in Bara Bread) 🍽
Trinidad's most beloved street food, born from the island's Indian diaspora: two soft, turmeric-yellow fried flatbreads (bara) sandwiching a mound of curried chickpeas stewed with cumin and garlic, finished with chutneys and — for the initiated — a slick of mango concentrate and pepper sauce. Traditionally sold by 'doubles ladies' balancing a board on their head, two dollars a plate, eaten standing at a crossroads on Saturday night. The name, the common story goes, comes from doubling the order. The bara must stay feather-light; the channa must be saucy; the ratio is a personal philosophy you will defend loudly.
Method
-
1
Boil soaked chickpeas until tender but not mushy (fresh: 60-90 min; canned: skip, just warm). Reserve 1.5 cups cooking liquid.
-
2
Heat 2 tbsp oil, pop the cumin seeds, then fry onion until soft and golden (8 min). Add garlic, curry powder, black pepper and thyme/chili; fry 1 minute until the curry toasts.
-
3
Stir in tomato and chickpeas, coat everything in the spiced oil, add cooking liquid to just cover and salt. Simmer 20-25 min, pressing a few beans to thicken the sauce. Final channa: saucy, clingy, golden-red, not soupy.

BARA: mix flour, cornmeal, baking powder, turmeric, cumin and salt with water to a soft, slightly sticky dough. Divide into 8, roll each to a 12 cm round, thickish and rustic.
-
5
Fry bara one or two at a time in 180 C oil, ~1-2 minutes a side until pale gold and blistered, puffed slightly. Drain. (Traditional version: grind soaked urad dal to a pouring batter, spoon rounds into oil, same fry.)

6
To build the double: lay one bara flat, heap 2-3 tbsp channa down the middle, add a line of chutney, dots of pepper sauce and cucumber chowney, fold the second bara over like a clamshell. Press once. Eat immediately, standing, ideally from paper.
