Ukha (Russian Fisherman's Soup)

Ukha (Russian Fisherman's Soup) 🐟

The Russian rule for fish soup is honesty: a caramelized onion-carrot broth, millet for body, and the fish added last so it just sets in the residual heat. Boiling hard turns ukha cloudy and the cod to cotton — the fisherman's patience is the actual recipe.

Method

  1. 1

Heat oil in a medium pot over medium-high; cook onions until they start to caramelize, stirring.

  2. 2

Add carrots and soften about 4 minutes more.

  3. 3

Pour in stock and water, add potatoes, bay leaves, peppercorns and salt; boil, cover, cook 10 minutes.

  4. 4

Add rinsed millet; cook 15 minutes until millet and potato are tender.

  5. 5

Lower to a bare simmer, slide in the fish cubes and cook just until opaque and flaking — do not boil.

  6. 6

Kill the heat, shower with chopped dill, rest 5 minutes and serve in deep bowls.
