Chivito (Montevideo's Monumental Steak Sandwich) 🥪
Uruguay's answer to "how much food can one sandwich hold" — and the answer is: a lot. The chivito is a full dinner between two slices of crusty bread: a thin, juicy beef sirloin grilled fast, stacked with melted mozzarella, ham, a fried egg, bacon, lettuce, tomato, roasted red pepper and piles of olives, with mayonnaise and mustard doing diplomatic duty. In Montevideo it is lunch, dinner, and the cure for a long night out. Ask for it "canadiense" (Canadian-style) and a fistful of French fries is buried right inside. Built in minutes on a screaming-hot plancha, it rewards good beef and a confident hand.
Method
-
1
Pat the steaks dry, season both sides with salt and pepper, and bring to room temperature 15 minutes.
-
2
Griddle the bacon until crisp; set aside. In the same fat, fry the eggs sunny-side; set aside.
-
3
Heat a heavy pan or plancha with a little olive oil until smoking; sear the steaks 1-2 minutes per side for juicy medium — thin steaks cook fast.
-
4
Stack mozzarella and ham on the meat in the last minute, cover the pan and let the cheese melt.
-
5
Butter the bread and toast face-down in the pan until golden.
-
6
Build: mayo and mustard on the bread, lettuce and tomato, the cheesy steak, crisp bacon, fried egg, red pepper, olives; close the top.
-
7
Cut in half on the diagonal (this is a sandwich that needs surgery) and serve immediately, with extra fries alongside — or buried inside.
