Balaleet (Bahraini Sweet Vermicelli with Savory Omelette) 🍝
Balaleet sounds like a mistake and eats like a revelation: sugar-rosewater-saffron sweetened vermicelli, piled under a thin savory omelette, topped with almonds. Bahrain and Kuwait argue over it; Ramadan tables across the Gulf can't start iftar without it. The sweet-salty contrast — custardy egg over florally sweet pasta — hits like dessert and breakfast shaking hands. It's the most fragrant way possible to eat angel-hair noodles, and after the first forkful, every objection to 'sweet pasta' quietly dies.
Method
-
1
Melt butter, add the dry vermicelli by handfuls, and fry gently 4-5 minutes, tossing constantly, until straw-gold and crisp-fragrant. Do not rush the browning — it's the whole dish.
-
2
Dissolve sugar and saffron in 1 cup water; pour over the fried vermicelli. Cook low, tossing, until the liquid is absorbed and noodles are soft but separate — 8-10 minutes.
-
3
Remove from heat; stir in rose water and half the almonds. Spread on a plate and cool slightly.
-
4
Whisk eggs with milk and salt. Butter a pan and make two or three thin, just-set omelettes (custardy center is right).
-
5
Drape the warm omelettes over the sweet vermicelli. Top with remaining almonds and a snow of powdered sugar.
-
6
Eat warm or at room temperature. It is traditional to press a fork through both layers in one bite — never separately.
