The Full English Breakfast 🍳
The café counter classic: fried egg, crispy bacon, bangers, black pudding, grilled tomato, mushrooms, beans and toast, all landing hot on one plate at once — a study in timing as much as cooking.
Method
-
1
Prick the sausages, lay them in a cold pan with a little oil and cook slowly over low heat for 12 to 15 minutes, turning, so they brown without splitting.
-
2
Grill or pan-fry the halved tomatoes and whole mushrooms with butter until the tomatoes char and the mushrooms give up their water.
-
3
In a dry hot pan, fry the black pudding slices until crisp at the edges, then the bacon until the fat renders and the edges turn crackly.
-
4
Heat the beans through in a small pan, keeping them loose.
-
5
Fry the eggs in butter over moderate heat, spooning fat over the whites to set the top while the yolk stays runny.
-
6
Build the plate while everything is hot: toast down, then sausages, bacon, black pudding, beans, tomatoes, mushrooms and the egg on top; season and serve immediately with tea.
