Bifana (Lisbon Pork Sandwich in Garlic-Paprika Marinade) 🥪

The Portuguese answer to the late-night problem: a pork shoulder steak pounded paper-thin, swimming in a marinade of garlic, white wine, bay and paprika, then griddled in its own sauce until the edges fry and the middle stays silky, and slapped into a crusty bolo bun so the bread drinks every drop. Bifana is not a recipe — it's a regional argument: the Alentejo version is red, vinegary and garlicky enough to clear a room; Lisbon's is paler, paprika-forward, wine-bright; the Porto street stall grills it on a battered comal next to a copo of beer. Either way, you eat it standing, sauce on your wrist, before midnight, and the counter tells you 'com queijo?' like family.

Lisbon District Portuguese ⏱ 45 min Easy

Method

  1. 1

Whisk the marinade — garlic, paprika, wine, vinegar, bay, salt, pepper, oil — into a paste; rub every steak on both sides, pack into a dish, cover. Fridge: 2 hours minimum, overnight better. Bay leaves and garlic stay in.

  2. 2

Take the meat out 30 min before cooking to lose its fridge chill. Scrape most of the garlic and bay off (they burn) but keep the paprika-wine film.

  3. 3

Griddle or heavy pan, very hot, barely oiled. One or two steaks at a time so they fry, not stew: 90 seconds a side until the edges lacquer dark red and the fat sizzles. If the pan goes dry, deglaze with a spoonful of marinade and spoon it over.

  4. 4

Split the buns, butter them lightly, toast face-down in the pan's last juice.

  5. 5

Build: one steak folded into the bun, a drizzle of leftover pan-marinade, mustard or pickle if you're that kind of person. Eat standing, within ten minutes, holding it like a sandwich should be held — with both hands and no dignity.

  6. 6

Porto style: stack two, serve with a cold imperial beer, ignore the napkin.
