Haft Mewa Recipe 🍇
Haft mewa — 'seven fruits' — is Kabul's Nowruz bowl: dried fruits and nuts each soaking in their own scarlet or amber syrup, then folded together so the new year tastes of every color.

Method
-
1
Sort the dried fruits by color into separate bowls — the drama of haft mewa is the separate dyes.
-
2
Simmer each bowl in its own light syrup with a pinch of sugar for 8–10 minutes until plump and glossy.
-
3
Cool the fruits in their syrups; the ruby apricots and amber figs stain in the pan while you wait.
-
4
When all are cold, fold the fruits together with a splash of the darkest syrup and the cardamom.
-
5
Brighten with rosewater, spoon into a glass bowl so the layers show.
-
6
Crown with almond and pistachio slivers before the new-year guests arrive.
