Banana Pancakes (Island Skillet Stack) 🥞
Very ripe bananas mashed straight into a buttermilk batter, griddled soft and tall, then a rum-caramelized banana crown — breakfast acting as dessert, and getting away with it.
Method
-
1
Whisk flour, sugar, baking powder, soda and salt.
-
2
In another bowl mash 2 bananas, then beat in buttermilk, egg, melted butter and vanilla.
-
3
Fold wet into dry until just combined — lumps are law. Rest 5 minutes.
-
4
Griddle or pan on medium-low, buttered. Ladle batter and let bubbles break the surface before flipping; stack 3-4 per plate.
-
5
For the crown: split the 2 topping bananas lengthwise; melt butter and brown sugar, add rum, caramelize the bananas cut-side down 2 minutes.
-
6
Lay the caramel bananas over the stack, spoon the sauce through, extra butter and maple alongside.
