Durban Bunny Chow 🍛

A hollowed quarter-loaf of crusty white bread packed with lamb or chicken curry — born in Durban's Indian community, now everyone's takeaway.

KwaZulu-Natal South African Indian ⏱ 75 min Medium

Method

  1. 1

Brown cubed lamb in butter; set aside. Sweat sliced onions until deeply golden, then bloom curry powder, cumin and coriander with ginger-garlic paste.

  2. 2

Return the lamb with chopped tomatoes and enough water to cover; simmer 45 minutes, add cubed potato in the last 20, until the gravy is thick and glossy.

  3. 3

Halve a crusty loaf, then halve again; carve a window in each quarter and pull out soft bread, leaving a sturdy case and a lid.

  4. 4

Fill the bread wells with hot curry, rest 5 minutes so the walls soak but don't collapse, and eat with hands — the bread is the second course.
