Irish Stew 🍲
The plain-perfect pot of Ireland: neck of lamb, onions, potatoes and water — for centuries no carrots, no thickening, just slow simmering under a lid in a cast-pan by the fire. Savoury, unapologetic winter food.

Method
-
1
Layer in a heavy pot: half the meat, half the onions and potatoes, seasoning each layer with salt and pepper.
-
2
Repeat with the remaining layers and dot butter on top.
-
3
Pour in water just to cover. Bring to the smallest possible simmer, lid on.
-
4
Cook low and slow 1.5–2 hours; never boil or the meat toughens.
-
5
Finish with chopped herbs and plenty of pepper; serve with brown bread and mustard.
