Idli with Sambar (Chennai Steamed Rice Cakes) 🍥
The most diplomatic breakfast in India: idli — a soft, slightly sour steamed cake ground from fermented rice and urad dal batter — served swimming in sambar, a lentil-and-vegetable stew soured with tamarind and seasoned with a curry-leaf-and-mustard-seed tempering and sambar powder. No frying, no dairy, largely gluten-free, and gentle enough that doctors prescribe it when you're sick, yet South Indians will fight you about whether the batter should ferment 8 or 12 hours. Eaten by hand: tear, dip, drag through coconut chutney, follow with a sip of hot sambar poured directly onto the idli.
Method
-
1
Soak rice + poha together 4 h (separate bowl); soak urad dal + fenugreek 4 h. Grind urad dal first in a wet grinder/mixer with minimal water to airy, fluffy paste; grind rice to semolina-fine texture. Mix with salt by hand (warm fingers help fermentation).
-
2
Ferment 8-12 h in a warm spot (26-30°C) until doubled and pleasantly sour — summer Chennai ferments fast; in winter use an oven with the light on.
-
3
For sambar: pressure-cook toor dal with turmeric and 1.5 cups water 3 whistles (or simmer 35 min) until completely soft; whisk to creamy.
-
4
Simmer 1 cup of this dal with chopped vegetables in 2 cups water + tamarind pulp (soak tamarind 15 min in warm water, squeeze, strain, discard seeds) + sambar powder + salt; cook 15-20 min until veg tender, stirring in remaining dal for body. It should be pourable, not thick.
-
5
Temper sambar: heat oil, pop mustard seeds, add cumin seeds, curry leaves, asafoetida and chile 20 s; pour over, cover sambar 5 min.
-
6
Steam idli: grease molds, pour batter 3/4 full, steam 10-12 min; test by pressing with a spoon — it should spring back. Release with a wet spoon.
-
7
Serve 3 idli per diner, sambar in a separate cup for pouring, chutney on the side. The proper first bite: tear an idli, dunk, then drizzle sambar over the remaining stack while it's hot.
