Kanelbulle (Swedish Cinnamon Bun) 🥐

The knot that runs a nation: Sweden drinks more coffee per capita than almost anyone and dips it into the kardemumma-spiced dough rolled with butter, sugar and cinnamon, twisted into its signature figure-eight. Bake on a Thursday — kanelbullens dag aside, Friday fika starts with yesterday's still-soft bun.

Modo de preparo

  1. 1

Mix melted butter, milk, 100 g sugar, salt; stir in yeast, then cardamom and flour. Knead 8 minutes to a smooth, slightly tacky dough. Rise, covered, 60 minutes until doubled.

  2. 2

Roll the dough into a 60 × 40 cm rectangle. Spread with the soft butter, then the cinnamon-sugar. Roll up from the long side into a log.

  3. 3

Cut the log into 16 pieces. Take one piece, slit it lengthwise almost through, and twist the halves around each other into the figure-eight knot; press the tail under.

  4. 4

Proof on trays 40 minutes. Heat oven to 225 °C. Brush with egg wash and scatter pearl sugar generously.

  5. 5

Bake 8–10 minutes — dark gold, still soft inside. Cool 5 minutes, then eat the same day with coffee. Freezes perfectly raw-shaped.
