Kingston Beef Patties 🥟
The orange-crusted parcel Jamaica feeds the world: a flaky, turmeric-tinted pastry shell crammed with Scotch-bonnet-seasoned minced beef that locals insist must be 'scotch bonnet hot and properly spiced.' In Kingston, patties are eaten standing at bakery counters with a piece of hard bread (or, famously, a slice of patty inside a bun). The trick is the filling: heavily spiced, gravy-thick, and cooked down dry so the pastry stays crisp.
Modo de preparo
-
1
Sauté onion and carrot until soft; add mince and break it up, browning well.
-
2
Stir in curry powder, thyme, pimento, garlic, tomato paste and scotch bonnet; toast a minute, then pour in stock and simmer until the filling is thick and almost dry. Fold in spring onions; cool completely.
-
3
Make a rough puff pastry: rub butter into turmeric flour in coarse chunks, add water, fold twice, rest 30 minutes.
-
4
Roll thin, cut rounds, mound filling on one side (a good Kingston patty is generous — nearly bursting), brush edges, fold to half-moons and crimp hard.
-
5
Glaze with egg and bake 200 °C for 20–25 minutes until the crust blisters gold-orange. Eat hot, standing up if possible.
