Modo de preparo

1
For the authentic crackle: enrich the baguette dough with a spoon of rice flour and a whisper of baking powder, steam the oven's first minutes, and cool until the crust sings when tapped.
-
2
Pickle daikon and carrot in fish-sweetened vinegar for at least 30 minutes; slice cucumber and tear coriander.
-
3
Split the warm bread lengthwise, smear both faces with pâté and a stripe of mayonnaise.
-
4
Layer sliced ham, cha lua or grilled pork belly, then pickles, cucumber, coriander and chilli; press, drizzle with a few drops of soy sauce, and wrap in paper so it stays crisp.
