Modo de preparo

  1. 1

Mix dry ingredients — oats, coconut, flour, sugar — in a big bowl.

  2. 2

Melt butter with golden syrup in a small pan until it bubbles together.

  3. 3

Pour boiling water over the bicarb in a cup and let it foam; tip the foaming mix into the melted butter — it should froth up dramatically. Work fast.

  4. 4

Pour the froth over the dry mix and stir to a sticky dough.

  5. 5

Roll heaped teaspoons into balls, press flat with a fork, well spaced — they spread.

  6. 6

Bake 180°C (350°F) for 10-12 minutes until evenly golden, pale ones soften later, dark ones stay crisp.

  7. 7

Cool on the tray 5 minutes before lifting; they firm up as they cool. Keeps two weeks in a tin.
