Hotteok (Seoul Street Pancakes Stuffed with Cinnamon Nuts) 🥞

Hotteok is winter on a griddle: a yeated wheat dough flattened in the palm, packed with a molten mix of brown sugar, cinnamon and crushed peanuts, then pressed flat with a circular spatula until it pancakes into a golden disc that oozes caramel when you bite it. Street vendors in Seoul fry them from late autumn onward, the ring-shaped press spinning over the oil like a coin on a table. The danger is real — the syrup center runs at lava temperature — which is exactly why locals tear a corner, blow, and only then commit.

Méthode

  1. 1

Mix flour, yeast, sugar and salt; add water and milk and knead 6-8 min to a soft, slightly sticky dough. Rub with 10 g oil, cover, prove 1 h until doubled.

  2. 2

Combine filling: brown sugar, cinnamon, peanuts, walnuts, sesame — it should be sandy and fragrant.

  3. 3

Divide dough into 8 balls (about 55 g). Oil your hands, flatten each ball in your palm, pack 1 heaped tbsp filling into the middle and seal like a bun, seam tight.

  4. 4

Rest the sealed balls seam-down 10 min, then flatten each with your palm to a 1 cm thick disc.

  5. 5

Shallow-fry in 2-3 mm of medium oil, 3-4 min per side. Halfway, press each pancake with a flat ring or spatula for an even golden disc and audible syrup bubble.

  6. 6

Drain on paper 1 min. Tear one corner, blow on it, and check the center is molten before serving — hotteok burns tongues for a reason.
