Kremsnita (Cream Slice with Whipped Custard and Custard Cream) 🍰
Every café vitrine in Ljubljana holds the same geometry: two sheets of crisp puff pastry sandwiching a cloud that is neither custard nor cream but both, dusted with icing sugar and sliced with a spatula at the moment of order. This is kremsnita, Slovenia's national dessert. The classic recipe calls for both pastry cream and softly whipped cream, folded so the filling wobbles but never runs; Bled's version owns the trademark, but the capital's bakeries argue the texture theirs is airier. Either way it is a three-palette dessert — butter, vanilla, sugar — executed to the gram.
Méthode
-
1
Dock the pastry rectangles with a fork, lay on parchment-lined trays, weigh down with a second tray and bake 20–25 min at 200 °C until puffed and deep gold; cool flat under a board so they stay level.
-
2
Make the pastry cream: infuse milk with vanilla, whisk yolks-sugar-starch, return to the pan and whisk to a thick custard; film-contact chill until fully cold.
-
3
Whip the cream soft and fold it into the cold custard in three movements, trying to keep the volume: the fill should pour like thick yogurt and settle like mousse.
-
4
Spread one pastry sheet with the whole filling (about 2 cm high), cap with the second sheet, and press very lightly. Chill at least 3 hours — overnight is the confident cook's answer.
-
5
Dust with icing sugar only at the table; cut with a sawing knife into squares. The first slice is always slightly crooked; that slice belongs to the cook.
