Kardemummabullar (Swedish Cardamom Knots) 🥯

Sweden's true coffee companion is not the cinnamon bun but the cardamom knot: a soft brioche rolled with crushed green cardamom butter, cut, stretched and tied into a knot so every spiral of filling gets its moment at the surface. Pastry-shop counters stack them like tiny bread pyramids.

Método

  1. 1

Crush the cardamom pods in a mortar — never buy pre-ground; the volatile top note is everything. Mix with filling butter and sugar into a brown-sugar-paste texture and set aside.

  2. 2

Dissolve yeast in lukewarm milk, add flour, sugar, salt and eggs, knead 8 minutes, then work in the dough butter piece by piece until the dough is glossy and pulls clean. Rise covered 60–90 minutes until doubled.

  3. 3

Roll the dough into a 40×30 cm rectangle and spread the cardamom butter over two-thirds. Fold like a letter, then cut into 2.5 cm strips across the folds.

  4. 4

The knot: take a strip, stretch it gently with both hands, wrap it around your left index finger, then pull the free end through the loop over your knuckles and onto the worktop. Two seconds each — watch a Swede do it once and you'll never forget.

  5. 5

Proof knots 40 minutes, brush with egg wash, scatter pearl sugar. Bake at 225°C/437°F for 8–10 minutes — hot and fast, golden outside, cloud inside.

  6. 6

Hot off the oven, brush with the sugar glaze for the pastry-shop sheen. Eat the same day; freeze raw knots and bake from frozen for fresh-forever breakfasts.
