Uzvar 🫐
Not quite compote, not quite punch: a Kyiv winter drink of dried apples, pears and plums simmered with honey, citrus and a whisper of spice, cooled dark and served so cold it stings — the non-alcoholic guest at every New Year table.

Método
-
1
Rinse the dried fruit; put apples and pears on in 2.5 L cold water, bring up and simmer 15 minutes.
-
2
Add plums, raisins, spices and orange zest; simmer 10 minutes more. The fruit should swell but not fall apart.
-
3
Cool to below 50 °C, then stir in the honey so it survives, plus the orange juice.
-
4
Strain, chill overnight so the colour deepens to amber-ruby. Serve ice cold in glasses, fruit spooned into each; a little lemon at the end if you want the sharp edge.
