Gallo Pinto (Costa Rican Rice & Beans) 🍚
Costa Rica and Nicaragua's most honest breakfast, and the plate you find on the table every morning across the Central Valley: yesterday's rice stir-fried with red or black beans, sweet bell pepper, onion and garlic until the grains take on a faint "spotted rooster" freckle — gallo pinto means just that. The magic is Lizano-style salsa and a whisper of cilantro, folded through off the heat, plus the crust that forms where the rice kisses the pan. In Costa Rica it is crowned with a fried egg, crumbled cheese, sour cream and a slice of fried plantain, and no breakfast ("desayuno casero") is complete without it. Leftovers improve; it is a breakfast built for reheating.
Zubereitung
-
1
Heat the oil in a large skillet or wok over medium-high heat.
-
2
Fry the onion and bell pepper until soft and sweet, 5-6 minutes.
-
3
Add the garlic and cumin; stir 30 seconds until fragrant.
-
4
Tip in the beans with a splash of their liquid; mash a few beans with the back of the spoon for creaminess.
-
5
Add the rice, breaking up clumps, and stir-fry to combine; press the rice against the pan to toast lightly in places.
-
6
Season with salt, pepper and salsa Lizano; cook 5-8 minutes, stirring now and then, until hot and slightly crusted.
-
7
Fold through the cilantro off the heat.
-
8
Serve heaped on a plate with a fried egg, crumbled cheese, sour cream and sweet fried plantain, and a strong cup of coffee.
