Manila Pork Sinigang 🍲

Pork ribs simmered in a sour tamarind broth with kangkong, radish and tomatoes — the Philippines' defining soup, sharp, savoury and deeply slurpable.

Luzon Filipino ⏱ 60 Min Einfach

Zubereitung

  1. 1

Cover the pork ribs with water, add sliced onion and garlic, and bring to a boil, skimming as it heats.

  2. 2

Simmer until the meat is tender, roughly thirty minutes, then season with fish sauce.

  3. 3

Stir in the tamarind mix to taste and simmer so the broth turns clean and sour.

  4. 4

Add the daikon, string beans and eggplant and cook until just soft.

  5. 5

Drop in the tomatoes and kangkong for the last few minutes so they stay bright, then serve steaming with rice.
