Dholl Puri (Mauritian Split-Pea Flatbread Street Wrap) 🫔

Port Louis's currency of hunger: a blistered whole-wheat flatbread wrapped around slow-cooked split peas (dholl) and crowned with a spoonful of atcha — pickled tomato, onion, carrot and turmeric, sharp and sunset-colored. Sold for pocket change at every dolly (street cart) from morning till late, it is the fastest, most honest meal on the island: soft peas, warm bread, crunchy pickle, a slick of chili oil if you dare, and optionally a fried egg or satay skewer rolled in alongside. Descended from Bhojpuri laborers' food and Creolized beyond recognition, dholl puri is now officially one of the world's best street foods — and it tastes like the sea wind off Caudan.

Modo de preparo

  1. 1

Cook the soaked peas with turmeric, garlic and salt: simmer 35-45 minutes until completely soft, most liquid gone, then mash coarsely — you want texture, not paste. Heat cumin in oil, stir through the dholl; keep warm.

  2. 2

Make dough from the flours, salt and warm water: firm-smooth, rested 20 minutes under a cloth. Divide into 8 balls, roll thin — as thin as you can without tearing, about 18 cm discs.

  3. 3

Griddle dry until tiny blisters blush, flip, brush a film of oil, flip again and raise the heat: it should puff and brown in under two minutes per side. Stack under a towel to stay pliable.

  4. 4

Assemble hot: a generous arc of dholl down the middle, fold the bread over like a envelope, then a big spoon of atcha on top (or inside, if you're from the pickle-first camp). Chili oil now, if you're playing for keeps.

  5. 5

Eat standing at the counter, within five minutes, while the bread is still steamy. Authentic Mauritian move: order two, share one with whoever's beside you.
