Mille-feuille (Parisian Thousand-Layer Pastry with Vanilla Cream) 🥐
Three panes of caramel-blistered puff pastry, two seams of vanilla crème pâtissière piped so you can see the stripes from the side, and a fondant lid marbled with chocolate — the mille-feuille is the Parisian pâtisserie's flag, engineered to collapse in exactly the right way. Fiercely geometric, absurdly fragile, best eaten over your plate like a civilized person.
Modo de preparo
-
1
Roll puff pastry between sheets into a 30×40 cm rectangle, dock heavily with a fork, chill 30 minutes. Sandwich with a second tray and bake at 200 °C for 15 minutes; dust with powdered sugar, remove top tray, bake another 10–15 until deep even caramel. Trim to three identical panes while warm.
-
2
Pastry cream: infuse milk with split vanilla. Whisk yolks, sugar and starch; pour on hot milk, return to pan and whisk until thick and bubbling. Off heat beat in butter, cover flush and chill.
-
3
Fondant glaze: warm fondant with a spoonful of water to a thick syrup; spread over one pane, marble with drawn chocolate lines, set aside.
-
4
Assemble upside-down for a clean top: glazed pane face-down, cream, second pane, cream, plain pane. Press gently, chill 1 hour.
-
5
Flip, dust, and cut with a sharp knife and a sawing motion so the layers shatter where you want them. Eat leaning forward over the plate — gravity is the last ingredient.
