Skillingsboller 🥮
Norway's money buns: soft cardamom-scented rolls swirled with butter, sugar and cinnamon, named for the one skilling they cost at medieval Oslo markets — still the default treat with coffee at any bakery window.
Modo de preparo
-
1
Warm the milk until just lukewarm, stir in yeast and a spoon of sugar and leave until foamy.
-
2
Knead flour, cardamom, salt, remaining sugar, egg and soft butter into a smooth, elastic dough — the cardamom is what makes it Norwegian, so don't skip it.
-
3
Rise until doubled, about an hour, then roll out into a large rectangle and dot all over with very soft butter.
-
4
Scatter a mix of butter-creamed sugar and cinnamon, then roll up tightly from the long side like a jelly roll.
-
5
Slice into rounds, twist each one lightly to open the spiral and set in a paper case; prove 30 minutes more.
-
6
Glaze with milk, shower with pearl sugar and bake until golden; eat the same day, torn apart, with coffee.
