Luwombo (Banana-Leaf Steamed Chicken Stew) 🍗

Buganda's Sunday showpiece, once royal court food: chicken (or guinea fowl, or goat) slow-cooked into a peanut-buttered, green-banana-thickened stew, then sealed into banana leaves and steamed until the parcel puffs and the steam does what no pot can — pressing the sauce back into the meat. The leaf is the pot, the lid and the plate; opened at the table, it releases a herbally smoke smell that makes conversations stop. In Kampala's best restaurants luwombo is ordered by the leaf, eaten with matooke mashed between your fingers, and never, ever reheated — the purists would rather you start a new parcel.

Modo de preparo

  1. 1

If using green bananas, boil and pound them to a paste; if using groundnut paste, thin it with stock into a pourable cream — either is a valid old method.

  2. 2

Fry onions soft, add garlic and spices, then brown the chicken in the golden mix; pour in stock and simmer covered until nearly tender, 30–40 minutes, sauce reduced and glossy.

  3. 3

Stir the banana or groundnut thickener through the stew until it clings to the meat — it should be much thicker than normal stew before it goes in the leaf.

  4. 4

Lay a leaf square over the crossing point of two others, spoon in the chicken with sauce, fold into an envelope parcel and tie with string; repeat.

  5. 5

Steam the parcels upright in a covered pot, water halfway up, for 30–45 minutes. Serve the parcels whole to open at the table — with matooke or posho, and no fork promised.
