Nasi Uduk (Jakarta's Coconut Rice with Fried Everything) 🍚

Jakarta's 'sleeping rice': fragrant coconut-milk rice, pandan-leaf-scented, left to steam so the grains go tender and slightly dense — hence the name. It arrives as a cart-side pile with fried chicken, tempeh, tofu, anchovies, boiled egg, kerupuk and a slick of sambal. The rice alone is mild; the whole plate together is the point.

Modo de preparo

  1. 1

Combine rice, coconut milk, water, salt, bay, galangal, lemongrass and pandan; cook in a rice cooker or covered pot until just absorbed.

  2. 2

Let it steam off the heat 10 minutes. The grains should stay separate and smell faintly of pandan.

  3. 3

While it steams, fry your garnishes in coconut oil: chicken or tempeh first, then tofu, then a fast crackle of anchovies.

  4. 4

Plate the rice in a mound, arrange everything around it and top with fried shallots.

  5. 5

Serve with sambal and kerupuk. Diners mix their own ratio; the cart-man never touches the plate.
