Bobotie (Cape Malay Curried Minced Beef) 🍛
Cape Town's culinary soul, brought over by Malay and Indonesian cooks centuries ago: mildly curried minced beef baked under a golden savoury custard of egg and milk, studded with raisins, almonds and bay leaves, with sliced onion and chilli soaked through the meat. Sweet, savoury and gently spiced at once, it should arrive at the table with the custard just set and slightly bronzed. Serve it over yellow rice with sambal and banana slices — the clash of chutney-hot sambal against mild curry custard is the whole point.
Modo de preparo
-
1
Soak the bread in 100 ml of the milk.
-
2
Melt butter and fry the onion and chilli until soft; stir in curry and turmeric and cook 1 minute until fragrant.
-
3
Add the beef, breaking it up, and brown for a few minutes. Off heat, mix in the jam, raisins, half the almonds and the soaked bread; season. Cool slightly, then stir in 1 beaten egg.
-
4
Spread in a buttered oven dish and level. Press bay leaves into the top and scatter the remaining almonds.
-
5
Whisk the remaining milk with the rest of the beaten egg, season, and pour evenly over the meat.
-
6
Bake at 180°C for 35-40 minutes until the custard is set and golden on top.
-
7
Cut into squares and serve with yellow rice, sambal and banana.
