Bajan Salt Bread Recipe 🐟
The Bajan morning ritual: salt bread torn open and stuffed with saucy cooked fish, fried dumplings on the side — fuel for market days and long drives up the parish coast.
Modo de preparo
-
1
Dissolve yeast and sugar in warm milk; add flour, salt, butter and egg to a soft dough and knead smooth.
-
2
Rise until doubled, about 60–75 minutes, then divide into six rounds and flatten slightly.
-
3
Brush with egg wash, score lightly, and bake at 200°C for 15–18 minutes until golden and hollow-sounding.
-
4
While the bread cools, simmer the desalted fish with tomato, onion, garlic and pepper into a thick, saucy flake.
-
5
Slit each salt bread like a pocket and spoon in the fish mixture — the gravy should reach the heel.
-
6
Fry a few dumplings in coconut oil on the side and serve everything steaming, island-fast.
