Bogotá Arepa de Queso 🌽

Pre-cooked cornflour patties griddled till they crack, split open and stuffed with salty, melting Colombian cheese — the country's daily bread, hot off the plancha.

Modo de preparo

  1. 1

Whisk the corn flour with salt and water, then add milk gradually until the dough is soft but not wet.

  2. 2

Rest it five minutes, then roll into balls and flatten into thick discs, pressing a thumbprint in the edge.

  3. 3

Griddle in butter over medium heat until pale-gold crusts form and the edges crack slightly, a few minutes each side.

  4. 4

Split open while hot and pack in a thick layer of grated salty cheese so it melts into the steam.

  5. 5

Stack them back on the dry griddle for a minute so the cheese sets, and serve hot.
