Jianbing Guozi 🥚
The king of North China breakfast carts: a mung-bean crepe spread with egg and scallions, daubed with sweet bean sauce and chilli paste, wrapped around a shatter-crisp cracker. Crepey, saucy, crunchy — eaten standing up before work.
Modo de preparo
-
1
Whisk mung bean and wheat flours with water into a thin, lump-free batter; rest 15 minutes.
-
2
Heat a nonstick or cast-iron griddle over medium; wipe with a thin film of oil.
-
3
Ladle batter and spiral-spread it into a paper-thin round; crack an egg onto the center and break it across the crepe with the spreader.
-
4
While the egg sets, scatter scallions and sesame; flip once the edges lift.
-
5
Spread sweet bean sauce and chilli paste over the surface; lay cilantro and the crispy cracker in the middle.
-
6
Fold into an envelope: sides in, then roll front to back. Cut in half and eat immediately.
