Tave Kosi (Albanian Baked Lamb with Yogurt) 🍖
The national dish of Albania: lamb braised with rice, then buried under a baked crust of yogurt, eggs and a butter roux. Tangy, custardy, deeply savoury — a casserole that behaves like a soufflé.
Méthode
-
1
Melt butter with olive oil in a lidded pan; brown the diced lamb well.
-
2
Add garlic, oregano, 300 ml water, salt and pepper; cover and braise until the lamb is nearly tender.
-
3
Add the rice and another 150 ml water; cook until the liquid is almost gone — the rice finishes in the oven.
-
4
Transfer lamb and rice to a casserole dish in an even layer.
-
5
Make a roux: melt 50 g butter, whisk in 2 tbsp flour, then thin with a ladle of yogurt.
-
6
Whisk the remaining yogurt with 6 eggs and a pinch of salt; stir in the roux for a smooth sauce.
-
7
Pour over the lamb, bake at 180°C/350°F for 40-50 minutes until the top is set and golden.
-
8
Rest 10 minutes before serving so the yogurt crust slices cleanly.
