Flija 🥞

The layered pancake tower of Kosovo, cooked the hard way outdoors: thin batter poured in rings onto a hot domed sač under a bell cover, each layer searing before the next is added, until a stack with a hundred strata rises golden. It is a day's social architecture — men turning the lid, the smell of butter drifting across the courtyard — and comes down from the dome torn by hand, drowning in melted butter, served with sour milk, yoghurt or cheese.

Pristina District Kosovar ⏱ 90 min Intermédiaire

Méthode

  1. 1

Whisk flour, salt and water to a thin, ribbony batter — much looser than pancake mix; rest it 20 minutes.

  2. 2

Heat a domed sač (or an inverted heavy pan under a bell/lid) and brush the top with butter.

  3. 3

Pour a ladle of batter in a spiral around the dome; let it sear and run thin down the sides. This is layer one.

  4. 4

Butter again, pour the next spiral. Repeat layer after layer for 40–60 minutes — the tower builds upward with each addition, edges browning under the cover's reflected heat.

  5. 5

Slide the whole stack off onto a board, cut in wedges through all the strata, and flood it with warm butter. Eat by hand with kajmak and cold yoghurt; nobody uses a fork.
