Mas Huni (Malé Breakfast: Shredded Smoked Tuna and Coconut with Roshi) 🍽

The two-scoop breakfast that starts every atoll day: smoked skipjack tuna flaked fine and pounded with fresh grated coconut and a hard pinch of chili and onion into two little hills — mas huni — served by round, chewy roshi flatbread and a wedge of ripe banana or a bowl of black tea with milk. No stove, almost no knife work: it's a tuna-and-coconut salad the ocean invented and the morning claimed. Order it in a Malé cafe and the older waiter will warn you: eat it with your hands, the roshi is the spoon and the bread at once.

Méthode

  1. 1

Flake the tuna fine — fingers or a mortar: in Malé it goes under the pestle with the onion, chili and a pinch of salt until it shreds to floss.

  2. 2

Fold in the grated coconut by hand, squeezing a bit so the oil of both marries. Taste: you want ocean-salty, chili-heat just at the edge, a lime wink on top.

  3. 3

Make roshi if from-scratch: mix flour, salt, water, oil to a firm dough, rest 15, divide into 8, roll each nearly transparent, slap into a hot dry pan — 40–60 seconds a side until it freckles and puffs slightly. Stack under a towel to steam-soften.

  4. 4

Plate in hills, not piles: two small domes of mas huni, a stack of roshi beside, banana at the side, tea black-strong in a cup.

  5. 5

Method of eating, officially: tear roshi with the fingers, scoop with the bread. The spoon is an emergency tool.

  6. 6

Lunch version (the atoll secret): add more chili, squeeze more lime, eat standing up with a second cup of tea.
