Koulenje 🌴

Pit dot bananas are Laos's answer to toffee: peeled dates churned with coconut cream until the pan holds a glossy, chewy pudding — the pride of Luang Prabang's market stalls.

Luang Prabang Lao ⏱ 45 min Facile

Méthode

  1. 1

Snip the dates open and slide out any stones; halve fat ones so they melt evenly.

  2. 2

Pour in the coconut cream and bring the pan to a gentle bubble over low heat.

  3. 3

Steadily stir in the sugar and salt while the cream shrinks into the fruit.

  4. 4

Keep stirring — the mix thickens, darkens and starts to pull away from the pan, about 20–25 minutes.

  5. 5

Spread into a shallow tray, scatter coconut shavings, and cool until sliceable.

  6. 6

Serve in squares with strong Lao coffee; it keeps a week in the fridge.
