Papanași (Romanian Donuts with Sweet Cheese and Sour Cream) 🍩
The national dessert of Romania: a dense, mildly sweet donut of fresh cow's cheese and flour, fried golden, crowned with a tiny ball on top, and buried under a blanket of sweet urdă cheese, sour cream and cherry or blueberry jam. Diners argue whether it is dessert or main course; the answer, in Moldova, is both.
Méthode
-
1
Mash the drained cheese with eggs and sugar until creamy; work in flour, baking powder and salt to a soft, slightly tacky dough that leaves the bowl.
-
2
Roll into ropes and cut donuts (rings or discs), with a small ball per donut for the traditional 'hat'; flour hands between cuts.
-
3
Let them rest 10 minutes so the baking powder wakes.
-
4
Fry at 170°C, two or three at a time, turning once, until deep gold all over; drain on a rack not paper (paper steams the crust).
-
5
Plate one donut per guest with its hat ball beside; heap sweet cheese over, flood around with smântână and finish the pile with jam running down to the plate's edge.
-
6
Serve immediately, with forks and a strong coffee to cut the richness.
