Wellington Pavlova 🍓

A crisp white meringue shell with a soft marshmallow center, crowned with whipped cream and kiwifruit — the national dessert of New Zealand, named for the ballerina who toured there.

Método

  1. 1

Whisk egg whites to firm peaks, adding the caster sugar one spoonful at a time so the meringue turns glossy and stiff.

  2. 2

Fold in the cornflour, vinegar and vanilla — they give the signature crunchy shell and creamy middle.

  3. 3

Shape a round nest on baking paper with a shallow well in the top and bake low and slow for 90 minutes; cool in the turned-off oven.

  4. 4

When fully cold, whip the cream to soft peaks and pile it into the well.

  5. 5

Dress with sliced kiwifruit and strawberries and spoon over passionfruit pulp just before serving.
