Vienna Apfelstrudel 🍎

Hand-stretched paper-thin dough rolled around tart apples, raisins and breadcrumbs spiced with cinnamon, baked till the seams glow — the café ritual of Vienna, served in a snowdrift of powdered sugar.

Central Europe Austrian ⏱ 90 min Hard

Método

  1. 1

Knead flour, egg, water, salt and melted butter 8 minutes until the dough blisters smooth; brush with oil, cover and rest warm 30 minutes — rested dough is stretchable dough.

  2. 2

Shake the dough out onto a floured cloth and stretch with the backs of your hands until you can read a newspaper through it; trim thick edges.

  3. 3

Layer toasted breadcrumbs (they drink the apple juice and save the crust), then apples tossed with sugar, cinnamon, lemon and rum raisins, leaving a border.

  4. 4

Roll with the cloth seam-side down, slash the top, dot with butter and bake at 200 °C 35-40 minutes until amber; drown in powdered sugar and serve warm with vanilla sauce.
