Petulla (Albanian Cloud Pancakes with gjizë and Honey) 🥞
Balkan kajo: fist-sized discs of yeasted dough, fried until the rim tans and the middle stays custardy, then stacked in a bowl and drowned in honey or the thick yogurt-gjizë sauce of mountain kitchens. In Tirana it shows up at bayram tables and winter afternoons alike, torn by hand, dipped twice, never with a knife — the national rule for anything this soft.
Método
-
1
Dissolve yeast and sugar in the warm liquids; wait 5 minutes until foamy, then pour into flour with salt and oil and beat to a soft, slightly sticky dough — softer than bread dough.
-
2
Cover and prove 30–40 minutes until visibly puffed; handle it gently from here on, you want the cloud left in.
-
3
Pinch walnut-to-lemon-sized pieces, stretch or drop them into medium oil (a test piece should sizzle immediately but not darken in seconds).
-
4
Fry, turning once, until the top face is spotted gold and the bottom is mahogany; the centre should still wobble if you shake the pan. Drain briefly.
-
5
Serve stacked in a low bowl, honey warmed and run over the top, or a thick spoon of yogurt-gjizë sauce collapsing down the sides.
-
6
Eat immediately, with hands or forks, alongside strong mountain tea or boza.
