Flija (Balkan Layered Pancake) 🥞
A runny flour-and-water batter drizzled in thin layers, each brushed with butter, oil and yogurt and baked under a domed lid until a tall, flaky tower rises. Kosovo's weekend breakfast, eaten by the tear-apart handful.
Método
-
1
Whisk flour, water and salt into a lump-free batter as thick as heavy cream — it must still pour.
-
2
For the filling, melt butter with oil, stir in yogurt and cream until custard-like; rest 10 minutes and mix again.
-
3
Oil a deep round pan and preheat a griddle or oven at medium.
-
4
Spread a thin first layer of batter over the base.
-
5
Drizzle and spread a thin coat of the butter-yogurt filling, then another batter layer; repeat, working fast, until the tower is several centimetres high.
-
6
Cover with a domed lid and bake 5–10 minutes more until the top sets and the edges caramelise.
-
7
Invert onto a plate, slice like a cake and serve with cold sour cream.
