Ceviche de Lima 🐟

   Slice very fresh fish into 2 cm cubes; salt lightly.

   Thin-slice onion, rinse in ice water and drain.

   Squeeze limes over the fish, add chili and onion; stir 2 minutes only.

   Serve at once with sweet corn, sweet potato and coriander.
